ABOUT 'FINE CHEESES FROM FRANCE'

The Fine Cheeses from France website is produced by the French cheese industry to promote awareness of French cheeses. It is organized in the following main sections: A-Z of French Cheeses, Did you Know?, Recipes, Where to Buy?, and Cheese Pairing. The Cheese Pairing section gives advice on combining cheese with wines and foods. There is also a Newsletter, Links section, and Quiz.

The A-Z of French Cheeses contains a descriptive database of more than 500 French cheeses. This can be searched by: Type of Milk (Cow, Ewe or Goat, or combinations thereof), Region, Strength, and Group (eg Blue, Fresh, Pressed). There is also a regional map, enabling users to click on a Region for a list of its cheeses.

The Did you Know section contains articles on Cheese History, Milk, Cheese Production, AOC, Cheese Groups, Strength, Nutritional Information, Fat Content, and Goat's Cheese. The AOC system, or 'Appellation d'Origine Controlee' is a cheese certification scheme based on approval of geographical origin, cheese production method, and cheese characteristics such as fat content, consistency, size, and type of rind.
